Plant sterols are found in vegetable oils and cereals and their consumption helps maintain normal blood cholesterol levels *. The mechanism of action of plant sterols in lipid metabolism is as follows: plant sterols have a similar chemical structure to cholesterol, affecting its reabsorption by the intestine. Cholesterol is normally excreted in the intestine through the bile to aid digestion and is then re-absorbed and enters the bloodstream. Plant sterols compete with cholesterol for re-absorption by the gut, reducing its levels even in people on a low-fat diet.

Modern diets are characterized by lower and lower levels of dietary intake of plant sterols, which is why many foods such as margarine are fortified with plant sterols. These fortified foods help to increase your daily intake. Despite this, it is difficult to achieve the desired intake, and often their increased consumption leads to a concomitant increase in calorie intake.
